Recipe: berry crumble

The latest book in our bestselling Let’s Cook series is now on sale. This week whet your appetite with winning recipes such as this pudding. The berries form a wonderful syrupy purée and the nuts in the oat crumble go beautifully with the tartness of the fruit.

Serves 6

OAT CRUMBLE
INGREDIENTS: 125 ml brown sugar; 5 ml baking powder; 125 ml oats; 250 ml cake flour; 100 g butter, diced; 1 packet (100 g) mixed nuts or a mixture of almonds and hazelnuts, finely chopped.
METHOD: Preheat the oven to 180 C. Grease 6 ramekins with butter, margarine or nonstick food spray. Mix the sugar, baking powder, oats and flour. Rub in the butter with your fingertips until crumbly and stir in the nuts.

FRUIT MIXTURE
INGREDIENTS: 250 ml brown sugar; 80 ml lemon juice; 1 banana, chopped; 1 apple, diced; 250 ml frozen berries.
METHOD: Heat the sugar and lemon juice over low heat, stirring until the sugar has dissolved. Cook for 5-10 minutes or until the mixture forms a syrup. Add the fruit (reserve a few berries for garnishing) and simmer slowly for another 3 minutes.

Pour the fruit mixture into the greased ramekins and sprinkle over the crumb topping. Bake for 20-25 minutes or until the topping is slightly crisp and pale brown.

Garnish with the reserved berries and serve with custard, cream or vanilla yoghurt.
