Recipe: banana cakes


Joburgers are queuing for the fresh food, cakes and pastries of new eatery Moemas. Tru these delicious banana cakes.

Makes 6 small or 1 large cake

INGREDIENTS: 165 g butter; 250 ml (1 c) caster sugar; 12 ml vanilla essence; 3 extra-large eggs, whisked; 560 ml cake flour; 2 ml salt; 2 ml ground cinnamon; 5 ml (1 t) bicarbonate of soda; 360 g ripe bananas, mashed; 75 g sour cream; 1 can (385 g) caramel condensed milk; toasted almonds.

METHOD: Preheat the oven to 160 C. Cream together the butter and sugar until light and fluffy. Add the vanilla essence and slowly add the whisked eggs, beating well. Sift together the dry ingredients and sift over the egg mixture in layers. Fold in, alternating with the sour cream and bananas. Spoon into 6 silicone ring cake moulds or a 22 cm silicone ring cake mould. Bake for 30-40 minutes or until a skewer inserted in the middle comes out clean. Leave to cool slightly in the mould then turn out on a wire rack to cool completely. Decorate with the condensed milk and almonds.
